Rare sugar production<\/strong><\/h2>\n\n\n\n<p class=\"has-small-font-size\">Several sugar converting enzymes were isolated at Kagawa University using the Izumoring strategy. These enzymes made it possible to produce many types of rare sugars, including D-allulose. Functional mechanisms of rare sugars<\/strong><\/h2>\n\n\n\n<p class=\"has-small-font-size\">These rare sugars can potentially be used for many applications, including in health food products, pharmaceutical products, and agricultural materials. However, the functional mechanisms of rare sugars have not yet been clarified. Plant-microbe interaction<\/strong><\/h2>\n\n\n\n<p class=\"has-small-font-size\">Microorganisms have the ability to produce these sugars, and plants are able to store them. Many primary and secondary metabolism-related genes function in both plants and microbes during their interaction.
