Rare sugar is defined as monosaccharides and its derivatives that exist in the natural world only in a minute amount.&nbsp; Ongoing studies in our laboratory aim to&nbsp; develop production system of rare sugars using microbial enzymes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong>2.\u3000Biochemical analysis of isomerases<\/strong><\/h2>\n\n\n\n<p class=\"has-small-font-size\">&nbsp;&nbsp;&nbsp;&nbsp; Chiral compounds such as sugars and amino acids exert various physiological effects.&nbsp; However, their origins and functions have not been completely explained yet.&nbsp; Our researches focus on isomerization reactions catalyzed&nbsp;
